The design converts more of the air motor’s rotational movement directly into blade movement, thereby increasing blade speed and meat cutting effectiveness. Starting out with significant gains in free speed where no load is being applied, blade speed performance increases even more as the tool is used in more heavy-duty, demanding applications like ham, pork loin and beef strips defatting. The enhanced design of the power unit has created more surface area of compressed air to generate power inside the motor. Power increases at each torque load value are directly proportional to blade speed increases, meaning that proportional gains in power are equal to proportional gains in blade speed, resulting in smaller drops in blade speed on initial contact as well as through the duration of the meat cut and increased efficiency in multiple-cut operations.
