The Unitized Vacuum Fryer, or UVF, is a unit that requires no external chamber because of its own internal vacuum. The unit requires less space than a conventional fryer and operates at 10% or less of normal atmospheric pressure in order to fry even high-sugar and high-starch foods like apples and potatoes without browning. Frying at under 248°F, it can also be used to prevent acrylamide formation. Other product features include:
